Olivier Fajol
Executive ChefBorn and raised in Cannes, France, Olivier Fajol’s culinary passion was ignited by his mother’s home cooking. After following this dream to culinary school, he began his career at the famed Hotel de Crillon in Paris, known for its Michelin stars. In 2004, Chef Fajol joined Four Seasons at the former resort in Terre Blanche, before moving to Mauritius in 2013, then to The St. Regis Bora Bora Resort, where he helmed the kitchen for seven years. He rejoined Four Seasons in early 2024 as Executive Chef of our Resort.

Arnaud Troalic
Executive Pastry ChefA native of Guingamp, in Brittany, France, Arnaud Troalic was born with a sweet tooth, having become enamoured with a locally made chocolate puff pastry. After earning multiple certifications in culinary school, he worked in some of Paris’s most acclaimed kitchens. In 2011, Chef Troalic got his first taste of the South Pacific as a pastry chef, planting the seed for an eventual return to French Polynesia. He worked throughout France for the next near decade, before joining our Resort in 2021 as Executive Pastry Chef.
