Raised on a farm near Lyon, France, Chef Boulud was steeped in French culinary traditions from a young age. His culinary journey began at 15 with an apprenticeship at a two-Michelin-starred restaurant in Lyon, and by 17, he was recognized as a finalist for the Best Culinary Apprentice in France. Since arriving in New York in 1982, Chef Boulud has established himself as one of America’s leading chefs, with his two-Michelin-starred restaurant Daniel and Café Boulud in New York. The Café Boulud brand – now with locations in Palm Beach, Toronto and the Bahamas – is especially meaningful to him, as it honours the original café started by his great-grandparents on their farm in Lyon.

Nicolas Lemoyne, a culinary artist with deep roots in Lyon, France, leads the kitchen at Café Boulud, the only one of its kind in the Middle East. With years of experience working under renowned Chef Daniel Boulud, Nicolas brings the essence of French cuisine to Saudi Arabia’s capital. His journey began in the legendary kitchens of Paul Bocuse, and later took him to Michelin-starred Daniel in New York and Brasserie Boulud in Dubai. Nicolas is passionate about creating dishes that resonate with the rich traditions of French cuisine, while also incorporating the finest local ingredients from Saudi Arabia. His menus, which change seasonally, showcase his commitment to quality and creativity. Working with a diverse team, including young Saudi chefs eager to master French culinary techniques, Nicolas strives to balance his personal flair with the classic touch of Chef Boulud.
