CHEF JEAN-GEORGES VONGERICHTEN
One of the world’s most famous chefs, Jean-Georges Vongerichten is also a skilled restaurateur, responsible for a constellation of three- and four-star restaurants worldwide. Born and raised on the outskirts of Strasbourg, France, Jean-Georges trained in both France and Asia, where he developed his love for the exotic and aromatic flavours of the East. Inspired by his travels, he is constantly developing fresh concepts and innovative menus.

CHEF GREG VERNICK
A native of Cherry Hill, New Jersey, Greg Vernick could be found in the kitchen at an early age, thanks to his grandfather owning a Philadelphia butcher shop and his mother owning a restaurant near their hometown. Pursuing his passion for the restaurant industry, he worked extensively with famed chef Jean-Georges Vongerichten. Greg is now an award-winning chef himself, with his own nationally recognized Philadelphia restaurant, Vernick Food & Drink, as well as the new Vernick Fish.

David Paterniti
Chef de Cuisine, Vernick FishChef de Cuisine David Paterniti’s culinary journey began at an early age, fostering a profound passion for cooking while spending extensive time in the kitchen alongside his mother. At the age of 8, he determined that his future lay in the realm of culinary arts. This fervor led him to pursue formal education, culminating in the attainment of a bachelor’s degree from the Culinary Institute of America in 2014. Post-graduation, Chef Paterniti joined Talula’s Garden, where his dedication and culinary prowess propelled him from a prep cook to sous chef to expediter within three years. Since the opening of Vernick Fish, he has consistently demonstrated his expertise and unwavering work ethic while steering the culinary team through the intricacies of service each week.
Chef Colin Henderson
Chef de Cuisine, Jean-Georges PhiladelphiaChef Henderson joined Jean-Georges Philadelphia in May 2024, bringing culinary excellence, expertise in restaurant sustainability and unwavering passion to his role; thoughtfully sourcing top-quality ingredients from small producers; and introducing his team to new techniques. Most recently, he oversaw Toronto’s Café Boulud and led kitchen operations at d|Bar. Before that, he was sous chef, starting his tenure with Four Seasons at the brand’s global flagship property in August 2018. A culinary management graduate of Ottawa’s Algonquin College, Chef Henderson has experience that includes working with Chef Michael Tusk in his San Francisco three-Michelin-starred restaurant, Quince, as well as under the tutelage of Michelin-distinguished Chef Daniel Boulud, learning the intricacies of fresh pasta and perfecting the sophisticated art of food plating.
