Our Philosophy

With 15 male and female sommeliers, our team is led by award-winning Eric Beaumard, as well as Francesco Cosci of Le George. Despite their diverse backgrounds, Eric and Francesco share a strong common interest and expertise in their field. Above all, they strive to embody our philosophy by celebrating the diversity of terroirs while showcasing family-run wineries and estates, particularly those committed to sustainable practices. Our sommeliers take to heart building relationships with producers – a principle that comes alive during regular vineyard visits, shedding a light on the stories behind the men and women who craft the wine we serve.

A Wine Cellar Rich in History

One of the most compelling narratives from Four Seasons Hotel George V, Paris is undoubtedly that of its world-renowned Cave Roc that houses some of the finest wines in the world. Few wine enthusiasts have had the privilege of crossing its threshold. Located in the heart of the Palace, it was designed in 1928, concurrently with the Hotel’s construction. The cellar earned its nickname Cave Roc because of its 6-metre-high (19.7-foot-high) vault and location in a former limestone quarry, whose stones were used to build the Arc de Triomphe. Since its earliest days, the cellar has been stocked with Bordeaux grands crus, Burgundies, old ports and rare cognacs.

At the outbreak of World War II, the cellar was immediately walled up to prevent enemy intrusion. When the Hotel closed for renovation in 1997, the iconic cellar nearly vanished, as architects sought to fill the space with concrete. It is fortunate that the Hotel’s management saved it in time. Stripped of its grands crus that were auctioned off a few months earlier, the cellar was left with barely a hundred bottles. To restore it to its former glory, the Hotel turned to Eric Beaumard. Driven by his passion, he undertook numerous trips to vineyards, personally connecting with producers. His extensive knowledge of the trade, coupled with the relationships he built with winemakers in the competitive circuits, were instrumental in his search for the most exclusive wines. Some winemakers even parted with bottles from their own collections to have their labels represented by their old friend in a legendary hotel. Over the course of nearly a year and through countless tastings, Eric has meticulously rebuilt the collection, offering guests of Le Cinq a truly diverse selection of rare vintages.

Eric Beaumard

Eric Beaumard’s interest in gastronomy was sparked by his grandparents at an early age. At 14, he decided to pursue a career as a chef, but a severe motorbike accident thwarted his dreams. Undeterred, he turned to the world of wine and sommellerie, passionately embracing this new career path. Over the years, he has won a string of coveted awards, including Best Sommelier in France, Best Sommelier in Europe and runner-up for Best Sommelier in the World. In his 25 years at Four Seasons Hotel George V, he has reinvented the Hotel’s legendary cellar and now delights guests at Le Cinq restaurant, where he is also restaurant director.

Francesco Cosci

Born in Cortona, a small town in the heart of Tuscany, Francesco Cosci fell in love with wine at age 16. A couple of years later, he left his native Italy for London on a whim at age 18, rising through the ranks at some of the city’s leading restaurants. In 2018, Francesco moved to Paris without speaking a word of French and, within a few months, became head sommelier at Michelin-starred restaurant Les Climats, whose renowned wine list focuses on Burgundy wines. Three years later, Francesco’s love for his native Italy led him to take up the role of sommelier at Michelin-starred Le George. Francesco continuously curates and enhances the 12,000-bottle wine list. Named Best Sommelier of Italy 2023, Francesco is also a certified Advanced Sommelier at the Court of Master Sommeliers.
