GAVIN KAYSEN
CHEF AND RESTAURATEURGavin Kaysen is a Minneapolis native and a James Beard Award-winning chef known for creating popular local experiences, including Spoon and Stable, Bellecour Bakery and Demi. His vision for a distinctive Mediterranean-inspired restaurant and street-front cafe opened June 1, 2022. This collaboration with Four Seasons Hotel Minneapolis brings Chef Gavin full circle as he previously opened Café Boulud at Four Seasons Hotel Toronto with Chef Daniel Boulud.
MARTÍN MORELLI
EXECUTIVE CHEFA native of Montevideo, the arts and culture capital of Uruguay, Chef Martín Morelli has always felt an appreciation for avant-garde techniques while remaining loyal to his minimalist culinary roots. His innate creativity and enthusiasm for experimentation led him through various kitchens in South, Central and North America. Joining Four Seasons in 2003, he has worked in hotels and resorts in Buenos Aires, Costa Rica and Silicon Valley. Now as Executive Chef in Minneapolis, he is overseeing the Hotel’s entire culinary team, bringing international sophistication to every area – from banquets and weddings to Riva Terrace, Nordic Village and In-Room Dining.

Thony Yang
Chef de CuisineWhen Thony Yang is asked to describe his life in one word, it comes to him easily: perseverance. The first member of his family to get a post-secondary education, he attended Schoolcraft College, then culinary school, where he graduated at the top of his class. After working with a renowned Chicago chef, Thony made his way back home to the Twin Cities to learn from Chef Gavin Kaysen at Spoon and Stable, Bellecour and Demi. He joined Four Seasons Hotel Minneapolis in 2022 and currently serves as Chef de Cuisine at Mara.

Eddy Dhenin
Executive Pastry ChefChef Eddy Dhenin brings a wealth of culinary experience from his international roles within the Four Seasons portfolio. His culinary journey began in Saintes, France, where family gatherings and cooking with his father fueled his love for the craft. Throughout his career, he has garnered numerous accolades for edible creations, emphasizing that true success lies in making a positive impact on people’s lives. In addition to creating and overseeing pastries and desserts at Socca Café, Mara, Riva Terrace and Nordic Village, Chef Eddy also leads the dessert programs for In-Room Dining, events and amenities at Four Seasons Hotel Minneapolis.
