Meet the team
Takuya Kubo
Executive ChefExecutive Chef Takuya Kubo, who grew up in Aomori Prefecture famous for its Ohma tuna, was exposed to fresh seasonal ingredients from the Tsugaru Strait, the Japan Sea and the Pacific Ocean from a young age. In 2018, he joined Sushi Ginza Onodera, expanding his career to the group’s international locations. As the head chef at Sushi Ginza Onodera in New York, he helped the restaurant maintain its Michelin Guide New York City star for five consecutive years. He later returned to Tokyo’s main branch and has now taken on the role of Executive Chef at Four Seasons Hotel Kyoto.
