Our Chefs love incorporating hearty ingredients with local, fresh produce – and taking a typical French-inspired dish and combining it with Egyptian elements. Using that approach, we introduce our culinary Masterdish: beef fillet marinated in hibiscus leaves, rosemary, sea salt and wrapped in a hibiscus-soaked torchon, served with roasted asparagus, glazed carrots and a carrot puree. The meat is cooked in the torchon on a charcoal grill, then sliced and topped with a delicious beef jus.2 / 2

Executive ChefBorn and raised in Ireland and previously stationed in the United Kingdom, Japan and in South Korea, Executive Chef Robert Prendergast’s international experience abroad has enhanced his passion for cooking. His favourite ingredients to work with are fresh locall produce and long-braised cuts of meat.
