Sustainable salmon sourced from fisheries certified by the Marine Stewardship Council
Sustainably sourced coffee available, in collaboration with Araku, supporting local farmers
Sustainable cocktails, plantable coasters and holy basil seed bombs for guests at Copitas
On-site herb garden supplies organic, hand-harvested ingredients to restaurants
Food waste reduction program in place
